4-1A - food separated and protected

EHS observed raw frozen, pooled eggs stored above ready to eat foods in the freezer. (IV) Frozen, commercially processed and packaged raw animal food may be stored or displayed with or above frozen, commercially processed and packaged, ready-to-eat food. CA: EHS had the PIC store the raw eggs beneath all ready to eat foods.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(8)(a) - before use after cleaning(p)
EHS observed employee washing multiple bowls in the mop sink.
CA: Dishes were rewashed by the PIC in the 3 comp sink with the appropriate chlorine sanitizer solution.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
EHS observed that the incorrect test strips were being used for the 3 comp sink. The sanitizer solution (chlorine) was expired and did not show up on chlorine test strips.

j) Cleaning Agents and Sanitizers.
- Cleaning agents that are used to clean equipment and utensils as specified under section (7) of this Rule, shall be provided and available for use during all hours of operation.
CA: EHS advised PIC to order the correct test strips or solution for the 3 comp sink.
