Observed apples stored in self service area with no means to protect them from contamination. . Except for nuts in the shell and whole, raw fruits and vegetables that are intended for hulling, peeling, or washing by the consumer before consumption, food on display shall be protected from contamination by the use of packaging; counter, service line, or salad bar food guards, display cases, or other effective means. PIC will provide protection from contamination.

Observed wet wiping cloths stored directly on counter. Cloths in-use for wiping counters and other equipment surfaces shall be: (i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). PIC removed towels and placed in a sanitizing solution.

Observed unwrapped single-service utensils not presented so that only the handles are touched. . Single-service and single-use articles and cleaned and sanitized utensils shall be handled, displayed, and dispensed so that contamination of food-and lip-contact surfaces is prevented. PIC disposed of utensils and replaced with clean utensils stored properly.
