12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(t) - food preparation (c)
Observed an employee placing/prepping an open box of nacho chips on a trash can located near the fryer. COS: PIC immediately discarded the chips and moved the box to a table.
(t) Food Preparation. During preparation, unpackaged food shall be protected from environmental sources of contamination.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed active water leak from the ceiling/pipe in the back of the kitchen. PIC mentioned the leak has been ongoing for approximately two weeks and is still active as of this inspection. CA: PIC will get the water leak fixed within 10 days.
