Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed lactic acid sanitizer above the recommended range. The recommended range is 272 - 700 ppm. CA - PIC contacted their vendor to service the sanitizer line. PIC will ensure that staff hand mix their sanitizer buckets until the line is fixed.
