Observed wet wiping cloths stored in soapy water with no sanitizer in it. COS. New bucket was made with sanitizer solution in it. CA: Wet wiping cloths shall be stored in sanitizer solution at the appropriate concentration between uses.

Observed that the facility had a grade of 100 'A' posted instead of the most recent score of 70 'c'. CA: The most recent inspection report shall be posted in a conspicuous place wher it is readable from a distance of 1 foot away.

Observed employee pick up cooked chicken wings with their bare hands to put into the sauce pan and observed employee placing sliced cheese onto cooked burgers with their bare hands. COS. Food discarded; employee washed hands and donned gloves. CA: Food employees shall not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment.

Observed cold TCS food stored above 41 F (cheese, hot dogs). COS. To be discarded 4 hours from when they were removed from mechanical holding. CA: TCS food that uses cold holding as a control for safety shall be held at 41 F or below.

Observed hot TCS food stored below 135 F (chili). COS. To be discarded within 4 hours from when it was removed from the warmer cabinet. CA: TCS food that uses hot holding as a control for safety shall be held at 135 F or higher.

Observed that the hand sink was completely blocked/filled with food; was full of ground beef, lettuce, and sauces. COS. Moved. CA: Hand sinks shall be kept clear and accessible at all times.

Observed that the door to the mobile unit is kept open. COS. Closed. CA: Exterior openings shall be self-closing and tight-fitting or otherwise protected from pest entry.

Observed that food was stored on a cutting board on top of the 3-compartment sink; the paper hand drying provisions for the hand sink are on the end of/above the 3-compartment sink, so after washing hands employee would reach over the food and drip water onto the food being prepared/served. COS. Food was discarded and food prep moved. CA: Food shall be stored in a manner that protects it from contamination, such as splash.

Observed that the unit did not have any trash cans; they did have a trash bag in the front of the unit upon inspector arrival which was removed and then no trash bag or waste disposal was available for sometime until a new bag was hung up. RCA: Recommend adding a trash can in the unit. CA: A receptacle shall be provided in each area of the food service establishment or premises where refuse is generated or commonly discarded, or where recyclables or returnables are placed.
