Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed Knorr seasoning bottle inside of handwashing sink upon entry of the kitchen. CA: 1. A handwashing sink shall be maintained so that it is accessible at all times for employee use. COS: The Knorr container was removed from the handwashing sink.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed a container of peeled onions sitting directly on the floor during preparation which opens the food up to possible contamination. CA: food shall be protected from contamination by storing the food At least 6 inches (15 cm) above the floor. COS: The container of peeled onions were removed from the floor and placed on a carboard box six inches above the floor.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(g) - jewelry (c)
Observed two employees prepping vegetables with bracelets on their wrists. CA: (g) Jewelry. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. COS: The bracelets were removed and their hands were washed before they donned gloves and continued to prep veggies.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed the handles for the scoops in all rice cookers touching the food. CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food and the container. COS: The scoops were rearranged so that the handles are stored upright and not touching the food directly.
