6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed several TCS food items (marinara sauce, cooked sausage, cooked ground beef) stored in RIC located in front pizza station area without date mark labels. All TCS food items cooked and stored for more than 24 hours shall bear a date mark Label indicating the prepared and discard date to prevent possible contamination. COS: Advised PIC to place date mark label on all stored TCS food items and to train staff on consistent date mark practices.
