17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed food residue and debris on floors and walls near 3-compartment sink in main kitchen area and on floors beneath shelving units in walk-in cooler. Corrective action - PIC advised to perform detailed cleaning in these areas. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(3)(h) - dressing areas and lockers, designated and provided (c)
Observed employee personal item (purse) stored on shelving with food service items in main kitchen area. Corrected on site - PIC relocated handbag to bag storage hooks. Lockers or other suitable facilities shall be provided and used for the orderly storage of employees' clothing and other possessions.
