Observed several boxes of bowls and cups being stored directly on floor inside of the shade that is located outside. code:At least 6 inches (15 centimeters) above the floor. 3. Single-service and single-use articles shall be stored as specified under paragraph 1 of this subsection and shall be kept in the original protective package or stored by using other means that afford protection from contamination until used. CA: Advised PIC to remove boxes from the floor.

Observed several reach-in coolers in the front service area and main kitchen with derbies accumulated inside them. in addition observed several reach-in units with a build of debris on the surface of the units. code:The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations. 3. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. CA: Advised PIC to increase the cleaning for all units.

During time of the inspection observed food debris throughout the kitchen, on the floor as the floor was soiled with grease, and ice was spilled on the floor. code:floors, walls, and ceiling shall be clean to sight and touch CA: Advised PIC to increase cleaning inside of the kitchen.
