Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed sanitizer water temperature of 57 F. The recommended temperature range is 75 - 95 F. EHS also observed a quat sanitzer concentration of 0 ppm. The recommended range is 150 ppm - 400 ppm. Upon further investigation, PIC confirm that there was an ongoing issue that hot water was being mixed with cold water. PIC said she had notified the district of the issue and the district had no info from the admin.
A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation at contact times specified under subsection (8)(b)3 of this Rule shall meet the requirements specified in DPH Rule 511-6-1-.07(6)(g), shall be used in accordance with the Environmental Protection Agency (EPA)-registered label use instructions P, and shall be used as follows:
PIC will contact their vendor service the Sanitizer line for the 3C sink. EHS also advised PIC to hand mix the sanitizer until the line cans be serviced.

Observed a can opener with a heavily soiled blade.
EHS had an employee clean and sanitize the can opener before it next use.

Observed several boxes of expired food in the dry storage area. Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. PIC discarded all expired items.
