Observed failure to properly store in use utensils in between uses. Observed ice scoop at bar stored in the ice well with handle in contact with the ice. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: 5. In a clean, protected location if the utensils, such as ice scoops, are used only with a food that is not time/temperature control for safety food PIC removed scoop and placed in clean area.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(p) - warewashing equipment, determining chemical sanitizer concentration (pf)
Observed failure to provide testing equipment for warewashing machine. Concentration of the sanitizing solution shall be accurately determined by using a test kit or other device PIC shall order testing equipment.
