Observed cheese left out of cooler. If unable to keep inside unit between uses, must provide additional cold holding such as a table top cooler / cold holding unit. Observed residential dorm type refrigerator with mozzarella cheese at 43.9F. Must be capable of 41F or below. Add or replace with commercial ANSI cooler capable of 41f or below.

Missing thermometer in Rovsun warming cabinet and couldn’t find the one in the freezer. Provde hanging or suction cup thermometers.

Single use articles and/or single service articles are not being kept in the original protective package or are not being stored by using other means that afford protection form contamination until they are used. Observed unwrapped to go utensils in cup for self service with a hair over the handles. Suggest to provide prewrapped for self service.

Missing proof of sanitizer chemical test strips. Provide and ensure levels as required. See code and educational documents provided.
