Observed failure to allow proper air drying prior to stacking storage containers. Observed serveral metal hotel pans stored stacked on top of each other while still in a significantly wet state. Shall be air-dried or used after adequate draining before contact with food

Observed failure to maintain door of walk-in cooler properly sealed. Observed large gap underneath the door of the walk-in cooler. Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. PIC shall reseal door
