Observed cutting board with build up and black stains. Equipment food-contact surfaces and utensils shall be clean to sight and touch.
Observed mold like substance behind the flap on the ice machine. Equipment food-contact surfaces and utensils shall be clean to sight and touch.
Observed measuring spoon and other containers stored unclean in multiple places with food debris. Equipment food-contact surfaces and utensils shall be clean to sight and touch. PIC will replace cutting boards with 3 to 5 days.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Wet wiping cloth not stored in sanitizing solution between uses. Observed wet cloths stored on counter top surfaces improperly. Once soiled, wet, cloths must be stored in a container of sanitizing solution.
