6-1A - proper cold holding temperatures
Observed dairy products on counter ranging from 43 to 50 F. PIC discarded and told to hold items on ice to maintain temp at 41 F or below.
2-2A - management knowledge, responsibilities, reporting
The PIC could not provide documentation or otherwise satisfactorily demonstrate during the inspection, that all food employees and conditional employees are informed of their responsibility to report to management information about their health and activities as it relates to diseases that are transmissible through food.
2-2E - response procedures for vomiting & diarrheal events
No vomit fecal matter clean up kit or procedures available at time of inspection. CA: PIC will obtain one.
12A - contamination prevented during food preparation, storage, display
Employees had jewelry on fingers and wrists working in kitchen. PIC corrected.
12C - wiping cloths: properly used and stored
Observed wet wiping cloths not stored in sani buckets in between uses. PIC informed to keep wet rags in sanitizer between uses.
13A - posted: permit/inspection/choking poster/handwashing
Current inspection report not posted in public view at walk up window.
14A - in-use utensils: properly stored
Ice scoop handles stored in ice in ice bucket. PIC corrected.
