Observed black mold like substance on the baffle of the ice machine. PIC will discard all the ice then ensure that the machine is cleaned and sanitized.
9-2 - compliance with variance, specialized process and haccp plan
Regulation: 511-6-1.04(6)(k) - reduced oxygen packaging, criteria (p, pf)
Observed chicken being Sous vide near the meat prep sink in the kitchen. PIC stopped the process and discarded the chicken.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed several hot water baths below 135 F. PIC replaced the water baths.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
observed several metal pans that were wet while being stacked. PIC will ensure that all dishes are air dried before stacking.
