Observed several TCS foods in the walk in fridge that were above 41 F. PIC discarded the tested items.

Observed several TCS foods in the walk in fridge that were above 41 F. PIC discarded the tested items.

Observed items (rags, chemical, brush) in hand sink at the time of inspection. PIC removed items and will keep hand sink free of clutter and accessible to employees at all times.
Observed mold like build up on interior of ice machine. CA- PIC will clean and keep all food contact surfaces clean to sight and touch.

At the time of inspection, the dish machine was not reaching a dish surface temperature of 160 F. PIC will use 3 compartment sink to clean and sanitize food contact surfaces.

Observed food debris build up on hood vent. CA- advised PIC to clean ASAP and keep a cleaning schedule.
Observed employee drink in the reach in cooler in undesignated area. PIC discarded drink and will have employees place their food/drinks in a designated area where they cannot contaminate customer food.
