Observed TCS food items in WIC above 41F, Chicken 44F, Egg 44, and Butter 44F. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. C/A COS: PIC relocated TCS food items to other RIC units.
