Observed stickers on the outside of dishes stored clean. CA: Advised PIC to clean dishes to sight and touch. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Observed a RIC in disrepair and therefore unable to hold TCS food at 41 F or below. Made PIC aware and all TCS food was removed from RIC and a tech was called to come and fix it.
Observed zero concentration of sanitizer in dish machine. PIC made aware and called ecolab to fix.
