6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed failure to maintain TCS food at 41F or below. Observed raw chicken stored in reach in cooler at 48F. (f) Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above, except that roasts cooked to a temperature and for a time specified in subsection (5)(a)2 of this Rule and reheated using the same temperature and time conditions as cooking may be held at a temperature of 130°F (54°C) or above. P PIC turned down the temperature of the reach in cooler.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed failure to use handwashing sinks only for washing hands. Observed lettuce that was dumped inside front kitchen handwashing sink. (o) Using a Handwashing Sink 2. A handwashing facility may not be used for purposes other than handwashing. Pf PIC removed lettuce from sink.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed failure to date mark TCS foods that are stored inside facility for more than 24 hours. Observed containers of shrimp, onions, beef, and cheese with no date marking inside reach in cooler and walk in cooler. (g) Ready-to-Eat Time/Temperature Control for Safety Food, Date Marking
- Except when packaging food using a reduced oxygen packaging method, and except as specified in paragraphs 5 and 6 of this subsection, refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. The day of preparation shall be counted as Day 1. Pf PIC advised to date mark all TCS foods items held for longer than 24 hours inside facility.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed failure to have test strips for sanitizing solution inside facility. (h) Temperature Measuring Devices, Manual and Mechanical Warewashing. (i) Sanitizing Solutions, Testing Devices. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Pf
j) Cleaning Agents and Sanitizers. PIC advised to order test strips for sanitizer.
