Storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. Informed PIC to store food covered. PIC covered food items.

Observed raw shrimps in prep sink in standing water. Advise Mgr to thaw meats must in several ways. under cool running water, microwave, cooking or in refrigerator. Instructed PIC proper way of thawing food.

At least 10 foot candles (108 lux) at a distance of 30 inches (75 cm) above the floor, in walk-in refrigeration units and dry food storage areas and in other areas and rooms during periods of cleaning;
At least 20 foot candles (215 lux):
(i) At a surface where food is provided for consumer self-service such as buffets and salad bars or where fresh produce or packaged foods are sold or offered for consumption;
(ii) Inside equipment such as reach-in and under-counter refrigerators;
(iii) At a distance of 30 inches (75 cm) above the floor in areas used for handwashing, warewashing, and equipment and utensil storage, and in toilet rooms. PIC will replace bulb with a brighter light.

Observed throughout the facility that food is stored without a date mark. Food stored greater than 24 hours must have a date mark to determine when to discard it. Food can only be held 7 days. (In your deep freezer place the date prepared). Instructed PIC the proper way of date marking. PIC date marked properly.

Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. PIC will clean and maintain clean.

Observed cutting prep top board sticky and not clean and sanitized. Observed the failure to maintain sanitizer concentration in wiping buckets at recommended levels. Sanitizer concentration shall be maintained at recommended concentration as described in the food code and test kits made available to measure sanitizer concentration. Informed PIC to discard sanitizer solution and prepare a new batch. PIC discarded sanitizer solution and made a new batch.
