Observed multiple food containers not properly air dried- and stacked on top of each other. Discussed with PIC to ensure all equipment and utensils are air-dried properly in a tapered position spaced out before stacking. PIC removed dishes to be rewashed and properly dried and stored.

Observed food residue on cold holding cabinets containing raw food products (shrimp)and ready-to eat (cheesecake).
