2-1B - hands clean and properly washed
Regulation: 511-6-1.03(5)(c) - when to wash (p)
Observed employee grab raw shrimp and put it on the grill and proceed to grab ready to eat foods such as a tortilla, lettuce, tomato, and cheese. Employees must remove gloves and wash their hands between donning another clean pair in between handling raw to ready-to-eat foods.
6-2 - proper date marking and disposition

Observed TCS foods such as cooked chicken and beef in multiple units. All TCS foods must have a insistent date-marking procedure. PIC was instructed to put a date mark on foods.
