6-1A - proper cold holding temperatures
Observed diced tomatoes which were not being properly cold held in a prep top unit with a temperature of 52 degrees. Lettuce had been in prep top for less than 4 hours. PIC placed lettuce in reach in to cool to 41F.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Plumbing shall be kept in good repair. The hand sink nearest the grill has a leak on the hot water side.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(j) - single-service and single-use articles, safe and clean (p, c)
Observed foods such as raw meat being stored in grocery store bags. PIC will remove food from bags.
