6-1A - proper cold holding temperatures
Observed TCS foods being stored above 41F. Foods include cut leafy greens (48F), pork belly (47F), chopped carrots (45), and shrimp (43). PIC was instructed to place foods in reach in units to reach the proper temperature.
6-1D - time as a public health control: procedures and records
Regulation: 511-6-1.04(6)(i) - time as a public health control (tphc) (p, pf, c)
Time not marked on rice used for spring rolls/California rolls and bowls. Mark time at temperature of 135F of freshly cooked rice. Must discard all time controlled product after 4 hours. No leftovers. Time label placed on rice as required.
6-2 - proper date marking and disposition

Observed multiple food items including boba (yogurt 3/17) tuna (3/19), and salmon (3/22) stored after date of disposition. All TCS foods prepped or removed from original packaging must be date marked after being stored for 24 hours and shall not be used after 7 days of its prep date. PIC discarded food items.

Observed incorrect inspection report posted. The most current inspection report must be posted at all times in viewing distance for customers.

Bathroom not enclosed with tight-fitting, self-closing doors. Bathroom doors must be able to close independently to avoid contamination.
