4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed multiple pans/containers in the storage area containing residue and stacked on top of other wet pans/containers. Equipment food-contact surfaces and utensils shall be clean to sight and touch. PIC removed pans/containers and brought them to the dish pit to be washed.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed TCS foods stored in reach in cooler and under prep top cooler past their disposition date. All TCS and ready to eat foods prepped in kitchen and stored after 24 hours must be date marked for disposition 7 days from prep-date. PIC disposed of out-of-date foods.
