Observed all TCS products in WI cooler ranging from 45F to 48F. TCS foods must be held at 41F or below. Ambient of unit was 42F. COS- Manager voluntarily discarded all TCS products in WI. Facility must move new TCS products to RI cooler until the unit is repaired. Facility has 1 week to repair the unit or propose alternate cold holding plan.

Observed exterior of deli slicer with buildup. Clean all components of slicer thoroughly after each use. COS- Manager pulled to be re-cleaned and will be the designated slicer cleaner.
