Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed ready TCS foods such as Italian sausage (prepped on site), chicken (prepped on site), and lettuce held for more than 24 hours not properly date marked with the prep date or disposition date. Ensure all opened packaged and non-packaged food are date marked.
