Observed two cans of cooking fuel stored above above clean baking molds, single service items and utensils in a rack near the office area at the time of this inspection. COS: Fuel removed. CA: Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, and single-service and single-use articles by separating the poisonous or toxic materials by spacing or partitioning; and locating the poisonous or toxic materials in an area that is not above food, equipment, utensils, linens, and single-service or single-use articles.

Observed a bucket with a soap solution stored with single service item utensils on a low rack of shelf in the kitchen area at the time of this inspection. COS: Soap removed. CA: Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, and single-service and single-use articles by separating the poisonous or toxic materials by spacing or partitioning; and locating the poisonous or toxic materials in an area that is not above food, equipment, utensils, linens, and single-service or single-use articles.

Observed salmon thawed without removing from the package as stated on the package label in a reach in cooler in the kitchen area at the time of this inspection. COS: Discarded. CA: Reduced oxygen packaged fish that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment prior to its thawing under refrigeration that maintains the food temperature at 41°F (5°C) or less.

Observed two bags of single service items (plates and to go boxes) being stored on the floor at the time of this inspection. COS: Removed. CA: Store single service items in a clean and dry location at least 6" above the ground.
15B - warewashing facilities: installed, maintained, used; test strips
Observed that facility had expired chlorine test strips (to test dishwasher sanitizing concentration) at the time of this inspection. CA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.
