2-1B - hands clean and properly washed
Regulation: 511-6-1.03(5)(c) - when to wash (p)
Observed staff members alternating between preparing sandwiches, gathering supplies, entering WIC and changing tasks without washing hands or changing gloves in between. COS: Instructed staff to wash hands between task changes. CA: Ensure that all staff are trained in washing hands and putting on new gloves when changing tasks.
2-1C - no bare hand contact with ready-to-eat foods or approved alternate method properly followed
Regulation: 511-6-1.04(4)(a)1,2,3,4(i) - preventing contamination from hands (p), (pf), (c)
Observed staff member touch ready to eat food products with barehand while relocating the food products. COS: PIC instructed staff member to discard food products that were touched. CA: Ensure that staff is fully trained on the importance of glove use and not touching food products with bare hands once they are cooked and ready to eat.
