Observed coffee prep area with an ice machine with severe build up of scale and brown debris at the time of this inspection. Observed ice machine in the main kitchen with mold like build up on the internal side of the unit at the time of this inspection. COS: PIC placed out of order to clean. CA: Ensure food contact surfaces of ice machines in all kitchen areas are cleaned and sanitized frequently enough to prevent build up and contamination.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(g)2 - kitchen and tableware, properly handled to protect food-/lip-contact surfaces (c)
Observed during the course of this inspection in multiple areas of the main kitchen spoons/forks/serving plates being stored in ways that did not protect the food/lip contact surface of the items. CA: Management stated that they will re train staff on how to properly store all equipment with a food/ lip contact surface to prevent contamination.
