Observed container of raw chicken stored directly ontop of container of raw beef in reach-in cooler. CA: Foods must be stored by minimum cook temperature. COS: No contamination was observed, raw chicken was moved and stored next to raw beef.

Observed bag of shredded mozzarella cheese stored directly ontop of bag of raw pork in reach-in cooler. CA: Foods must be stored by minimum cook temperature. COS: No contamination was observed, cheese was moved to top shelf.

Observed raw shelled eggs stored over ready-to-eat foods (whole head of cabbages and bag of carrots) in reach-in cooler. CA: Foods must be stored by minimum cook temperature. COS: No contamination was observed, raw shelled eggs were moved to bottom shelf.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed containers of cooked chicken, and cooked pinto beans stored in reach-in coolers without date marking. CA: Refrigerated, ready-to-eat, TCS food prepared and held for more than 24 hours shall be clearly marked for a maximum of 7 days. COS: Chicken, and beans were discarded.
11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed chicken thawing in sink in standing water. CA: Foods must be thawed under refrigeration that maintains the food temperature at 41°F, submerged under running water or as part of the cooking process. COS: Chicken was under 41F and was placed in container submerged under running water to finish thawing.
