Observed TCS foods (egg omelets and breakfast sandwiches containing egg, cheese, and meat) below 135F at 119F. Corrective action: PIC notified; educated PIC on proper hot holding temperatures. I suggested to turn the temperature of the hot holding unit up to maintain 135F. PIC turned hot holding unit up 5 degrees from 163F to 168F. PIC chose to discard TCS foods below 135F.

Observed opened plastic water bottle in handwashing sink. Corrective action: PIC notified; educated PIC on acceptable employee drinks in kitchen area is a single-use cup with a lid and a straw.

Observed items (bucket, water bottle, and single-use cup) in handwashing sink at beginning of inspection. Corrective action: PIC notified; items were removed from handwashing sink. Discussed handwashing sinks are to always be readily available and are not to be used for any other purpose.

Observed empty bottle of sanitizer test strips at time of inspection. Corrective action: PIC notified; PIC to order new test strips. Educated PIC to test sanitizer concentration each time a new sanitizer batch is made.

Observed handwashing sink not accessible at beginning of inspection due to cleaning cloths being stored in sink. Corrective Action: PIC was notified, towels were removed from handwashing sink. Discussed handwashing sinks are to always be readily accessible.

Observed food cooling not in a way to allow for rapid cooling. Breakfast egg bowls stacked ontop of one another, breakfast cheese sandwiches and egg omelets stored in a deep tightly lidded container. Corrective Action: PIC was notified, employee educated on proper cooling methods. Food items were unstacked and loosely covered to allow for rapid cooling. Provided cooling method handout.

Observed single use articles (spoons and forks) not being displayed so that contamination of food and lip contact surfaces is prevented. Corrective Action: PIC was notified, spoons and forks were rearranged to have handles up to protect food contact surface.

Observed no certified food safety manager at facility. Corrective Action: PIC was notified, facility will have 90 days for food service employee to obtain a certified food safety manager certification. Will perform informal follow-up April 29 to verify.

Observed interior of ice machine soiled, not cleaned to sight and touch. Corrective Action: PIC was notified, employee assigned to clean. Discussed increasing cleaning frequency of ice machine.
