6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed cold TCS food cold holding above 41F in prep top cooler. (Creamy Salsa Dressing 56). CA: Cold TCS foods shall be stored at 41F or below. COS: CFSM had dressings relocated to reach in freezer to be rapidly cooled to 41F or below. CFSM instructed staff to keep a lower volume of dressing packets in container when being stored in prep top cooler.
12A - contamination prevented during food preparation, storage, display

Observed heavy ice buildup on fan in reach in freezer unit in main kitchen. No food contamination involved. CA: COS: CFSM will have reach in freezer cleaned of ice and will have reach in freezer serviced. CFSM placed pans on top rack to catch any falling ice or liquid.
