Observed container with raw meat in reach-in freezer uncovered at base of operation. Meat was not actively cooling. CA: Food must be covered except when cooling. COS: Meat was covered.

Observed chicken salad in prep-top cooler across from the cook line with discard date of 11/23 and inspection performed on 11/26 at base of operation. Observed opened carton of half and half in walk-in cooler with discard date of 11/24 and inspection performed on 11/26 at base of operation. CA: A refrigerated, ready-to-eat, TCS food that requires datemarking shall be discarded if it exceeds 7 days since preparation or being opened. COS: Chicken salad and carton of half and half were discarded.

Observed employee lunch stored above ready to meat foods in reach in cooler. CA: All foods shall be stored in a way that avoids contamination. COS: PIC removed lunch bag and placed below all ready to eat foods.
