Routine
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several TCS foods cold held above 41°F in reach in cooler to the right of the grill and in prep top & reach in cooler underneath prep top. CA: TCS food must be cold held at 41°F or below. The ambient air temperature (AAT) of the reach in cooler to the right of the grill was 42°F. The AAT of the prep top & reach in cooler underneath was 43°F. COS by moving TCS foods out of temperature for less than 4 hours to different coolers to cool back down. Maitenance adjusted the coolers to AATS of ~35°F. Must ensure coolers are maintaining this AAT before placing TCS foods back within them.

Observed gravy hot held at 128°F within bain-marie. CA: TCS food shall be hot held at 135°F or above. COS by reheating to 180°F on grill, since gravy was out of temperature for less than 4 hours.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed interior of ice machine with mold-like accumulation. CA: Food contact surfaces of equipment shall be cleaned at a rate that prevents accumulation. Must deep clean within 72 hours.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed containers storing clean pans and utensils under grill with food residue accumulation. CA: Food contact surfaces shall be clean to the sight and touch. COS by rewashing containers, pans, and utensils. Health Authority suggests cleaning twice a day if daily is not sufficient.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed several live roaches throughout main kitchen area. CA: CA: Pests must be controlled by routinely inspecting the facility for presence of pests and contacting pest control when pests are found. PIC showed invoice from latest pest control visit, which was early May 2026. PIC states pest control will come out soon and service this facility more frequently to address this issue.
