NOTE: All cold holding and hot holding temperatures in compliance. NOTE: Facility has an outdoor smoker. Ensure all food is covered when bringing to outdoor smoker and back into facility. NOTE: Facility has an outdoor storage room. The floors, walls, and ceiling are not easily cleanable. Facility may only keep packaged single use items and packaged food in the outdoor storage room. Note: Refrigerated, ready-to-eat time/temperature control for safety foods prepared and held in a food establishment for more than 24-hours shall be clearly marked to indicate the date of prep or the date by with the food shall be used/discarded for a maximum of 7 days.
