12A: .04(4)(u)Observed multiple containers of uncovered nacho chips stored outside of the sneeze shields at the main buffet line. Observed a new self service station in the dining room and food was not covered or protected by sneeze shields. All food, whether on display, being prepared for service or placed for consumer self-service shall be protected from contamination from consumers standing or sitting within eight feet of the food. (P) Corrective Actions: Containers of nacho chips were placed under the sneeze shields at the main buffet line. Food and new self service station was removed. Discussed with certified food safety manager (CFSM) that if they want to have a new self service area in the dining room, a remodel application would have to be submitted to Gwinnett County's Environmental Health Department so that a proper self service station is installed.
