By adding a raw, undercooked meat, facility will now be considered a risk type 2 and must visit Gwinnett County's Environmental Health Department by 10/11/24 to change facility from risk type 1 to risk type 2. Failure to do so may result in a food service permit suspension. Note: Smoked salmon is a raw food (smoking process is only for flavoring). Three packages of smoked salmon were discarded. Discussed with CFSM that a parasite destruction letter must be available and in compliance with the Health Department if serving salmon that is undercooked. Discussed that consumer advisory and reminder statement must be added to all menus. Consumer advisory/reminder statement example provided. Note: Facility bottles fruit shots and prepares and packages their own fruit popsicles. Discussed with CFSM that the ingredients must be listed on the label and a warning statement for unpasteurized juices must also be listed. The following statement must be included on the label for bottled fruit shots and packaged fruit popsicles: "WARNING: This product has not been pasteurized and, therefore, may contain harmful bacteria that can cause serious illness in children, the elderly, and persons with weakened immune systems."
