NOTE: All cold and hot holding temperatures complied unless otherwise noted. NOTE: Facility uses super red coloring for coconut pastry. Ensure all employee items are stored below customer items. Ensure all shelving units store food, equipment, and single-use items 6 inches off the floor. The ambient air temperature of the three-door standing reach in the cooler was in compliance. Observed the fans turn off every time the door was opened. Recommended: seeing if there is a setting that will keep fans on when doors open. Discussed that it would be difficult to keep foods 41 F or below if the doors are opened frequently. An allergen notice must be on display indicating the major food allergens used in the facility.
