NOTE: All cold holding temperatures in compliance, unless noted. NOTE: When cleaning food and non food contact surfaces of prep tables and coolers, equipment must be washed, rinsed, and sanitized. NOTE: Dining counters and tabletops shall be cleaned and sanitized routinely after removing all soiled tableware and food trays shall be cleaned and sanitized after each use by one of the following methods: (i) A two-step method in which one cloth, rinsed in sanitizing solution is used to clean food debris from the surface and a second cloth in separate sanitizing solution is used to rinse; (ii) Sanitizing solution is sprayed onto the surface and the surface is then wiped clean with a disposable towels. 6-1A: .04(6)(f)Multiple individual cartons of milk cold holding greater than 41F for less than 4 hours in the prep coolers in the cafeteria (see temperature log). Facility keeping the doors to the prep coolers fully open so small children can reach milk. However, the ambient air temperatures of the coolers when the doors are left open during lunch hours are greater than 41F. The ambient air temperature of the prep coolers when the doors are closed are in compliance. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. (P) Corrective Actions: Milk placed in the walk in freezer to rapidly cool. Recommended storing smaller quantities of milk in the coolers during lunch periods and checking the temperatures more frequently.

There are no test strips available to measure the sanitizer concentration. Food service Rules and Regulations Chapter 511-6-1- required that: [.05(3)(h),(i)]- A test kit or other device that accurately measures the concentration in mg/L (or ppm) of sanitizing solutions shall be provided.
