12C: .04(4)(m)Observed in-use wet wiping cloths stored in sanitizer buckets containing too low of a sanitizer concentration. SECOND CONSECUTIVE VIOLATION OF THE SAME CODE PROVISION Cloths in-use for wiping counters and other equipment surfaces shall be stored in sanitizer of the appropriate concentration in-between uses and laundered daily. (C) Corrective Actions: PIC (Person in Charge) remade the sanitizer buckets to contain an adequate concentration of sanitizer.

10D: .04(4)(d)Observed all working containers of sauce not labeled with the common name. SECOND CONSECUTIVE VIOLATION OF THE SAME CODE PROVISION Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food. (C) Corrective Actions: Person in Charge (PIC) labeled the sauce containers.

(C) Corrective Actions: Person in Charge (PIC) remade the sanitizer bucket to an adequate concentration and placed new wiping clothes in the bucket.

17D: .07(4)(b)Observed employee items (bags, phones, and personal items) stored above single-use pizza boxes on the dry storage shelf. Areas designated for employees to eat, drink, and use tobacco shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. (C) Corrective Actions: PIC moved the employee items to the designated employee storage area (bottom rack on dry storage shelf).
