Routine
6-1A - proper cold holding temperatures
Observed TCS food cold held at greater than 41 degrees Fahrenheit. Reach in units in main kitchen held the following: EGGS SHELLED- 56ºF, AMBIENT 58ºF SAUCE CONCENTRATE 56ºF. Also observed wet batter on counter with a 79ºF temperature, held with no time as temperature procedures. PIC discarded item in question.
12B - personal cleanliness
Regulation: 511-6-1-.03(5)(k)3,4 - hygienic practices
Observed various employee personal items spread throughout facility. Consulted with PIC on providing employee storage storage to prevent comingling with kitchen equipment.
13A - posted: permit/inspection/choking poster/handwashing
Regulation: 511-6-1.02(1)(d) - displaying of the inspection report (c)
The most current inspection report is not prominently displayed in public view, within 15 feet of the front or primary public door and between five feet and seven feet from the floor or in an area where it can be read at a distance of one foot away. PIC removed old inspection report and replaced with the previous report.
