Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed sanitizing dishmachine not at the proper minimum concentration for sanitization. Advised PIC that concentration must be 25-100 ppm. PIC reprimed peristaltic pump and brought concentration to 100ppm. COS.
