Observed sanitizing dishmachine not at the proper minimum concentration for sanitization. Advised PIC that concentration must be 25-100 ppm. PIC reprimed peristaltic pump and brought concentration to 100ppm. COS.

1. Equipment food-contact surfaces and utensils shall be cleaned: NOTE: observed food debris on can opener. PIC immediately removed can opener and placed it in appropriate area to be cleaned and sanitized.
