6-1D - time as a public health control: procedures and records
Regulation: 511-6-1.04(6)(i) - time as a public health control (tphc) (p, pf, c)
Observed butter in various locations in facility's counters being held using time as temperature control without time stamp. Upon investigation PIC reveal it was a new procedure passed on by upper management with out any documentation. He understands employees must also mark items with information on temperature or time when item was remove from temperature control environment. Follow up information will be sent to health Authority.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed sanitizer buckets testing at o ppm for quaternary ammonium. Since repeated violation will have PIC come up with a log of sanitizer concentrations to help mend the constant problem, PIC agreed and will follow up in 10 days.
