Observed hand sink near server area to have no hot water available. A handwashing sink shall be equipped to provide tempered water at a temperature of at least 85ºF (29.4 ºC) through a mixing valve or combination faucet. Corrective Actions: PIC immediately discontinued use of the hand sink by labeling it as "out of order" and directed all employees to use additional hand sink in pizza prep area. PIC to call plumber to restore hot water to hand sink.

Observed hand sink in pizza prep area and hand sink in main kitchen area to have hot water with low pressure. Water under pressure shall be provided to all fixtures, equipment, and nonfood equipment that are required to use water except that water supplied as specified under subsection (1)(k)1 and 2 to a temporary food service operation or in response to a temporary interruption of a water supply need not be under pressure. Corrective Actions: PIC to call plumber to repair water pressure issue.

Observed wiping cloths stored in sanitizer bucket with 0 ppm QAC solution. Cloths in-use for wiping counters and other equipment surfaces shall be: (i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). Corrective Actions: Food employee immediately poured the bucket out and obtained new solution at proper concentration between 200-400 ppm.
