(a) Handwashing Cleanser, Availability. Each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap. Pf Note: Observed hand washing area to be missing soap to properly wash hands at time of inspection. PIC placed a bottle of soap on hand sink during inspection to COS.

A hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures. Pf Note: No paper towels were observed in hand washing area at time of inspection. PIC placed new paper towels in dispenser to COS.

A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation at contact times specified under subsection (8)(b)3 of this Rule shall meet the requirements specified in DPH Rule 511-6-1-.07(6)(g), shall be used in accordance with the Environmental Protection Agency (EPA)-registered label use instructions P, and shall be used as follows:

(a) Good Repair. All physical facilities shall be maintained in good repair.
(b) Cleaning, Frequency and Restrictions.
The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of food is exposed, such as after closing.
Note: Observed dirt accumulation on floors and walls of facility. PIC instructed to ensure that they are cleaned regularly in such a way to prevent excessive accumulatio build-up.

Note: PIC will place a suitable shield to protect from contamination.

Observed wooden shelves and wooden ceiling tile to be unsealed and absorbent.
Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.
Note: PIC will seal wooden surfaces with nonabsorbent material in order to prevent liquid absorption.
