Observed all sanitizer buckets to have a concentration of 0ppm when tested. Employee had connected rinse aid, instead of sanitizer, to the connection hose. Cloths in-use for wiping food spills from tableware and carry-out containers that occur as food is being served shall be cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration of 50-100ppm (chlorine) and 200-400ppm (quaternary ammonium. COS: PIC manually prepared a sanitizer in the 3-comaprtment sink and the concentration read 200-400ppm when tested.
