Observed raw bacon and raw sausage patties stores in reach-in cooler uncovered. Food shall be stored in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. Corrective Actions: Manager covered raw bacon and raw sausage patties.

Observed eggs being held on TPHC to be marked as being removed from temperature control at 7 AM and to be discarded by 11 AM. The eggs were still on TPHC at around 12:20 PM. Waffle batter containing was also observed sitting at room temperature without TPHC marking.

The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control; Pf

(iii) The food shall be cooked and served, served at any temperature if ready-to-eat, or discarded, within 4 hours from the point in time when the food is removed from temperature control

Note: Eggs and waffle batter were discarded

Observed foods in prep top cooler, reach in coolers, and steam wells to be uncovered while not in use.

Food must be stored in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination

Note: PIC immediately covered all uncovered foods.

Observed several food items, stored in the 4 door reach-in cooler, to be held in containers with no covering to avoid contamination. Observed sausage gravy in steam well and raw pork in walk-in cooler with no covering. Storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. Note: PIC immediately placed covers on all uncovered food items.
