Observed several gaskets in the kitchen area to have an accumulation of food debris and black build-up. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. PIC voluntarily showed the employee what to clean and will implement a cleaning schedule to include the gaskets.

1. Except as specified in paragraph 4 of this subsection, cleaned equipment and utensils, laundered linens, and single-service and single-use articles shall be stored: i) In a self-draining position that allows air drying; and

(ii) Covered or inverted. Note: Observed multiple food containers on drying rack stacked together that does not allow for adequate air drying. COS: PIC rewashed the containers and placed them on the drying rack to allow for appropriate air drying.
